Insert -- Dynamic Processors, eg. Compressor, Gate (Pre-fader)
Plug-in -- Spatial & Special Effects, eg. Reverb, Distortion (Post-fader)

Just to share my preference, and also something that people with hardware
mixing/console experience may do for the spatial/special effects:

Create an AUX track. This simulates a real mixer where you have an AUX send
and return, in which case (in software) you can have a new track to receive
the processed signal (akin to sending back to a separate channel rather than
the AUX return). Most people outside of the Pro Audio line would just insert
a plug-in on the working track, which isn't wrong IMHO.
