afaik, there is no direct way in ardour to assign midi controllers to 
arbitrary menu actions. but since you can bind every menu item to a 
keyboard shortcut, programmable "keyboard" pedals such as this

might be useful.
or you can vandalize an old usb keyboard and build your own pedal. 
shouldn't be too hard. wooden footplate, hinge in front, some spring to 
hold it up and some rubber piece underneath to press a key.
