In simple terms the only difference is packaging.  If you need 4 cores 
you can either get that in 1 CPU with 4 cores, 2 CPU with 2 cores, or 4 
CPUs with 1 core.  When you look closer you may find difference in price 
for the CPUs and motherboards, heat generated, performance (negative or 
positive; sharing of resources, smaller distance between the cores).
