Well .. Jamin is good for limiting and all sorts of post processing.  :)

Yes.

You need to go to options and set "run plugins while recording" on, to
make plugins run while you are recording.

On the other hand though, when you're done with a project so that you
want the output "out" from ardour you should do an "export". By
exporting you can set a number of parameters for the output file.
