HI
I was running planet ccrma for a long time but with my slower computer
I eventually switched over to demudi and find it to be faster then a
redhat or mandrake.(you didn't mention it but Thac has the audio stuff
for mandrake).

I have gotten used to debian so I am not running to go back to
redhat...

From my Googling I gather that this is another Linux kernel that one would modify oneself rather than using one of the aforementioned. I am also wondering which file system to use. What are my choices and what are the advantages and disadvantages of each?

CCARMA and AGNULA are modifications to the Linux kernel (Red Hat/Fedora and Red Hat/Debian respectively) which are customized for low-latency audio and video. Is this accurate? Am I missing something? Are there more options? Again, I am looking for stability. What is the best combination to use?
