Put libxml-2.0.pc in a standard place like /usr/lib/pkgconfig/ or add 
your specific location to PKG_CONFIG_PATH with

PKG_CONFIG_PATH=$PKG_CONFIG_PATH:/<path_to_pc-dir>

in your ~/.bashrc

Ehm, as for gtk-config: I think you just need to _have_ that. It's in 
/opt/gnome/bin/gtk-config here.
