You can record two *mono* tracks at once if you have two different 
signals on the incoming left and right channels (like you have a mixer 
with two mixer channels panned hard left and hard right), you'll just 
assign the mono tracks in ardour to the correct incoming channel.

Otherwise, you'll need a card than has multi I/O, like the Delta1010LT card.
