Apart from that, it isn't always easy to simply flip the phase.
When tracking a drumkit, for example, you'll generally want to keep
tracks coherent phase-wise (even though the simple fact that mics are
spaced apart will ensure that sound coming from a particular piece
of the drumkit will always be somewhat misaligned in different tracks due
to the time difference).
