There are many aspects to bouncing from MIDI to audio.

One is saving processing CPU power. 

Having, say 31 synths all playing MIDI tracks live can be fine for
sketching ideas, for composition.  At other times it might be
preferable to activate the high quality output, the multicore options,
of every synth to get the best of them, like when the mix is ready for
printing. Having all output in high quality, combined with all the
audio tracks and with all the plugins, might have an impact on the
sound quality.

As one pro engineer mentioned, piling up plugins seems to thin out the
sound.

That is, when the CPU does not show obvious signs of being not
able to handle all of that at the same time.

With Bitwig for instance I use it from time to time to print out MIDI
to audio (to bounce, either in place or to another track) and continue
working from there. It also opens the door for audio manipulations.

Yet another use is to print the MIDI data that was recorded using an
external tube compressor or an external DSP processor.  You want to
free those devices for subsequent uses and, the MIDI track is all right
as it is.

In any case, back to the Bounce option in Ardour: it creates a new
region, but how to use that region ?
